Today

• Made some seitan. 500g VWG, 50g universal seasoning, 650g water, blasted in the food processor for a few minutes. I put it in the larger of the sous vide bags that I have. To date, I’ve got about a 50% failure rate on these after pressure cooking; today, I couldn’t even get the bag sealed in the chamber sealer. There was too much air and the bag kept mechanically pushing itself away from the seal bar. I ended up splitting the ~1kg into two blocks. One successfully went through the cooker without failure. The other I’ve frozen; I’ll see whether freezing helps with the sealing.
• I spent an ungodly amount of time trying to get tailwind to work, and doing some design experimentation.
• Learned how to write and apply overrides in nixpkgs. I noticed an issue with tailwind_4 in nixpkgs that wasn’t actually a tailwind issue. But I went through and made a useWatchman option anyways, before realizing that it was misplaced regardless.
